When should a restaurant enable auto-deplete on sale?
Enable it only after active recipes are tested and a default depletion warehouse is set. Biznsbook warns prominently before switching on because depletion posts real stock movements.
How does COGS variance work?
A nightly job snapshots theoretical ingredient cost from POS sales times recipes, then compares it to actual stock outflows. Variance over 20% shows red, 10–20% amber, under 10% green.
